Snacks on the go

I seriously struggle with eating enough during the day. For some reason my stomach doesn't tell my brain that I am hungry until I am beyond HANGRY! This is something that I am working through with my naturopath. One thing that I am doing is ensuring I eat SOMETHING every 2-3hrs, I need protein, something that will fill my belly and 'stick to my ribs'.

I was recently reminded how much I used to love having these little protein balls just sitting in my fridge waiting to be eaten. It is great having them on hand especially when I am out and about meeting with clients and don't have time for a real meal. I pop a few of these into a container and will have them to snack on between clients. Having them around ensures that I don't have so many hangry moments.

There are many different recipes for these little gems, I have amended and amalgamated so many over the years that I now just throw things into a bowl and stir HOWEVER the basic recipe for the ones shown here is as follows:

1 C. Oats

1/2 C. shredded coconut (try and find unsweetened and unsulphered)

1/2 C. puffed quinoa

1/4 C. milled flax

1/4 C. hemp hearts

1 tsp. vanilla extract

1 tsp. maple syrup (or honey or agave)

1/2 C. nut butter of your choice (if you use a sweetened nut butter omit the maple syrup/agave/honey)

Optional additions: raisins, chocolate chips, pumpkin seeds, sunflower seeds, nuts, dried blueberries or cherries

Mix all the ingredients together, then form bite sized balls and place in an airtight container and keep in your refrigerator. If you don't eat them all within 2 days they should last in the container for up to 2 weeks.
